Mom's lasagna 1 tomato sauce, hunts approximately 3 cups (large size) 9 lasagne noodles, cooked, drained and rinsed in cold water Filling: 2 cups of farmers cheese with salt or ricotta cheese 2 extra large or 3 medium or large eggs (beat them) Pinch of nutmeg, oregano, & basil ( can add more oregano & basil for more flavor) 1 small package frozen shredded spinach, cooked. After cooking in microwave sift out the extra water. 12 oz shredded cheese (mozzarella or Munster) 1. Spread a little tomato sauce on the bottom of rectangle pan 2. Cover with 3 long noodles ( you may need to trim noodles to fit in pan) 3. Spread tomato sauce on the noodles 4. Put half of the filling over the tomato sauce 5. Layer with shredded cheese 6. Layer noodles, sauce, filling and shredded cheese 7. Put remaining 3 noodles on top of pan. 8. Put the last of the tomato sauce on the noodles, sprinkle with extra oregano, basil, add the remaining shredded cheese 9. Bake for 45 minutes at 375 degrees, with foil on top of pan for 35 minutes. Uncover and bake for 10 minutes. Total cooking time 45 minutes.
