olive oil 1/2 onion 1 green pepper 2 cloves garlic 1 cup dried black beans 1 tbsp oregano 1 or 2 tbsp tomato paste (depending on your preference) red wine vinegar (to taste... start with less and add more as needed) cumin (to taste) salt and pepper as needed 1) Soak beans for a few horus 2) Chop and sautee onions for 5 minutes. Add green pepper and cook 5 more minutes. 3) Add beans and cover with water by a centimeter 4) Add other ingredients and heat to a simmer 5) Cook for 2-3 hours until beans are soft. Add water as needed.
