Chicken Salad Salad Ingredients: One bag of romaine lettuce (or other crunchy lettuce) 1/2 bag of salad croutons 1/2 of a small red onion, finely chopped Grilled or broiled chicken (any amount, I usually do 0.5 pounds). I like to marinade in Italian dressing since that's easiest, but any way it's cooked is fine. Dressing: 3 heaping tablespoons mayo 1/4 cup olive oil (or less, depending how you like consistency) 1 tablespoon sugar 1 tablespoon dried parsley (or 1.5 to 2 tbsp fresh parsley) 1 tablespoon dried chives (or 1.5 to 2 fresh tablespoons) 1 tablespoon lemon juice 1 teaspoon mustard 4 large cloves of minced garlic 1 pinch of red pepper flakes or cayenne pepper for spice (optional) A dash of Lawry's seasoned salt or bone suckin dry rub (optional)
